Seasonal Recipes FTW!

If I'm being honest, I only have so much to say that is worth taking the time to type, much less read. So in the interest of keeping this blog lively we've decided to take a more pragmatic approach to content development that folks can value and appreciate. From now on in addition to my occasional random garden musings and anti-lawn diatribes, we'll be using this forum to share some recipes focused on using seasonally available produce that we have discovered over the years during our various culinary and gardening adventures. Please feel free to send us any of your favorites as well! For starters, here is a pretty awesome recipe for garlic scape / kale pesto that we recently tried using our first batch of home grown garlic and some of the kale that has been a mainstay of our garden for years now.


Garlic Scape Pesto

Ingredients

10-12 garlic scapes (about 1 cup)

½ cup kale

¼ cup roasted pine nuts

½ cup extra virgin olive oil

¼ cup parmesan cheese

1 tsp lemon juice

Instructions

Step 1: Roast pine nuts in a dry skillet on medium-low for a few minutes, stirring frequently until golden brown. Set aside.

Step 2: Place garlic scapes & kale in a food processor and pulse for about 30 seconds.

Step 3: Add pine nuts and pulse again for about 30 seconds.

Step 4: Slowly add olive oil and process on high for 20-30 seconds.

Step 5: Add the parmesan and pulse again for 15 seconds.

Step 6: Add lemon juice, salt to taste, and process until well combined.
